Depending on how you plan to shoot, I'd pick the most advanced metering possible. That is, whatever "sees" the largest part of the frame. And yes, I shoot in 'A' mode pretty much all the time. It's very reliable and flexible, for the most part, and lets the camera do the mostly-mechanical process of balancing the abmient light for you.

As for focussing modes, single-shot servo is my mode of choice. I tried continuous servo for a couple of dives, but the camera got distracted pretty easily (fish swimming into and out of the frame were a major problem) and spent a lot of time hunting. With single-servo mode, you get a focus and it locks until you cycle the focus button...it's the only way to shoot, in my book.
