Aperture priority, spot metering, single servo auto-focus.

I've used continuous AF, but I found it very distracting. If something is continuously moving, it will allow you to get the shot off easier.

I'll sometimes switch to manual using wide angle if I've got plenty of time to set up the shot. I'll meter various spots within the scene.

I grew up on aperture priority. Most of what I shoot doesn't require precise shutter speed control. I'd rather pick the aperture for DOF or for optimum lens performance (e.g. f/8).
